Downtown pizza shop to re-open at month’s end
A downtown eatery will soon be dishing out its specialties again.
Simple Simons restaurant, 10 West Ninth St., intends to start serving up pizza before Halloween, said Jeff Burris. He and his wife, Kelli, opened Simple Simons in April 2000 and are running the restaurant again.
"We're looking forward to coming to the town of Eudora and getting involved with it," Jeff Burris said. "We want to be a success here."
Shortly after opening the restaurant, the couple turned over management to Steve Bates.
"When I opened I didn't get to meet the people of Eudora," he said.
Burris said he hoped getting involved with the town would mean working with schools and churches on fund-raisers. Having been in the business eight years and having run other Simple Simons locations, Burris said he'd had time to think about what the couple would like to do with the Eudora shop.
"Our goal is to give the town of Eudora the best quality pizza at the most affordable price and the best customer service we can," he said. "We're trying to go in there with something different."
When the restaurant re-opens, customers will find the same menu and buffet options as well as the same look inside.
"We're just cleaning up a little bit and going with it like it is," he said.
The couple plan to have a grand re-opening next month that will include pizza drawings and give-aways, Burris said.
"We just want to bring a good product back to Eudora and make a go of it," he said.
